The verdict

A thousand-year-old castle at the heart of a 3,700-acre estate in the Umbrian hills near the Tuscan border, which the Bolza family, architects and designers, have spent more than three decades bringing back from ruin, together with fifty farmhouses around it. The hotel is the castle: rooms no two alike, each looking both onto the courtyard garden and the hills, two restaurants, a candle-lit bathhouse in the old cellars, an oval pool cut into the lawn and a riding school for the family's Spanish horses. Three MICHELIN Keys.

Best for

A long, slow stay on a private estate, with horses, a kitchen garden and the castle to come back to.

Skip if

You want to sightsee every day: the estate is the destination, and the towns are a drive away. No pets.

Insider tip

Ride out across the estate on one of the Bolzas' Spanish horses, and keep a sunset for the terrace of the Ristorante al Castello.

The rooms

Thirty-six rooms and suites in the castle, all different, from 30 m² to grand suites, furnished with the Bolzas' own BB for Reschio designs, antiques and paintings; some windows are better suited to a crossbow than a view, which is part of the charm.

The setting

In the hills of Umbria near Lisciano Niccone, on a 3,700-acre estate of woods and meadows with more than fifty farmhouses, many of them restored as villas to rent. There is an oval pool on the lawn outside the walls, tennis, two gyms and the Teatro Equestre.

The food

The Ristorante al Castello, inside the walls with a terrace facing the sunset, cooks a refined Umbrian menu from the estate's gardens; the Ristorante alle Scuderie, in the old stables, is the all-day option, with Bar Centrale beside it and Il Torrino by the pool.

Getting there

Lisciano Niccone is in the hills north of Lake Trasimeno, close to the Tuscan border. Perugia has the nearest airport, and a car is useful.

Good to know

The Bathhouse, in the castle's old wine cellars, has a Roman bath, a hammam and a sauna. Reschio is not on Booking.com, so the link goes to its own site.
