The verdict
Fourteen white rooms behind the stone of Plaza de San Mateo, in the walled old town of Cáceres, built around one of Spain's great restaurants. Toño Pérez cooks and José Polo runs the room and the cellar at Atrio, which holds three MICHELIN Stars; the hotel holds three Keys, which makes it one of only five in Spain with the Guide's highest distinction for hotels. The architects Emilio Tuñón and Luis Mansilla set a courtyard of white concrete, oak and glass inside the old walls. You come here to eat, drink and sleep upstairs.
A two-night pilgrimage built around one dinner and one cellar, in a medieval town that is quiet at night.
You want a resort or a spa: the hotel has fourteen rooms, a roof terrace with small pools and a town at the door, and that is the point.
Book the restaurant when you book the room, and ask for a cellar visit before dinner: 40,000 bottles from twenty countries, with ninety-five vintages of Château d'Yquem at its heart.
The rooms
Fourteen rooms and suites, almost entirely white — painted panelling, pale bedding, large round tubs — with the suites looking over the old town. Atrio's sister house, the Palacio Paredes Saavedra on Calle Ancha, adds eleven rooms in a restored palace, which is why some listings give twenty-five.
The setting
On Plaza de San Mateo, at the top of the walled old town of Cáceres, a UNESCO World Heritage site of Roman, Moorish and Renaissance stone. The building joins an old block and a newer house behind a historic façade; the roof terrace looks onto the towers of the old town and has two small pools.
The food
Atrio, with three MICHELIN Stars, builds its menus around the produce of Extremadura, Ibérico pork included. The cellar, designed by Carlos Martínez Albornoz, holds about 40,000 bottles from twenty countries, and at its heart a tribute to Château d'Yquem with ninety-five vintages.
Getting there
Cáceres is about 300 km west of Madrid by road. Inside the old town the streets are narrow and partly closed to traffic; ask the hotel how to arrive and where to leave the car.
Good to know
Rooms were on sale for the Christmas week when we checked on 13 October 2026. The three Keys are those of the Guide's 2026 selection. Dress for dinner is smart.
