Spain in December: where to go, from the first snow to winter sun
December is the month Spain stops pretending to be a beach country. Four kinds of trip — snow in the Pyrenees, sun in the Canaries, a city lit for Christmas and a dinner worth the journey — nine hotels, and the dates that move everything.

For snow, the Aragonese Pyrenees: Canfranc Estación, the 1928 international station turned hotel, 7 km from Candanchú. For sun, Lanzarote, where December still averages about 22°C by day: César Lanzarote or Palacio Ico. For a city at Christmas, Madrid — the Ritz or Único — or Mercer Sevilla in Seville. For a dinner worth the trip, San Sebastián — Akelarre, whose restaurant closes on 19 December, or Villa Favorita on La Concha — or Atrio in Cáceres. In 2026 the first weekend of December runs from Saturday 5 to Tuesday 8 in ten regions, Madrid and Andalusia among them: book it first.
December is when Spain stops being a beach country, and the trips that work are the ones that accept it. On the mainland the sea is cold and the days are short; in exchange the mountains get their first snow, the cities light up for Christmas and the great restaurants have their best produce and their quietest dining rooms. Only one corner of the country keeps a real summer: the Canaries, where Lanzarote averages 21.8°C by day in December and close to 200 hours of sun.
So the first decision is not the hotel but the kind of December you want. The table below sorts the month into four trips; every hotel after it was chosen because it works in December specifically.

The four kinds of December trip in Spain
Temperatures are AEMET's long-term averages for December: the mean daily maximum and minimum. Any single December can be colder, wetter or brighter.
| If you want | Go to | December reality | Start with |
|---|---|---|---|
| Snow and mountains | The Aragonese Pyrenees | Ski resorts usually open in the first half of the month, snow permitting | Canfranc Estación |
| Sun | Lanzarote | About 22°C by day and 15°C at night; sea around 20°C | César Lanzarote, Palacio Ico |
| A city at Christmas | Madrid, Seville | Madrid 10°C by day and 4°C at night; Seville 17°C and 7°C | The Ritz, Único, Mercer Sevilla |
| A dinner worth the trip | San Sebastián, Cáceres | San Sebastián 12°C by day and 7°C at night, the rainiest city here; Cáceres 13°C and 5°C | Akelarre, Villa Favorita, Atrio |
For snow: the Aragonese Pyrenees
The Aragonese Pyrenees are high valleys and stone villages, with ski areas that range from Formigal-Panticosa, one of Spain's largest, to the smaller resorts of the Aragón valley. Candanchú and Astún, at the head of the Aragón valley below the French border, usually open in the first half of December if the snow has come; check their own opening dates before you book an early-December weekend around the skiing.
Canfranc Estación is the reason to come even if you do not ski. The Canfranc International Station opened in 1928 to join Spain and France under the mountains, lost its link to France in 1970 and stood empty for decades; since January 2023 its 240-metre building has been a hotel of 104 rooms, with two MICHELIN Keys, a spa with a heated indoor pool and, in an old carriage on the platform, Canfranc Express, which holds a MICHELIN Star. Candanchú is 7 km away and Astún 10.
Mind the calendar inside the hotel too: Canfranc Express is closed from 1 November to 13 December and reopens on the 14th, and the 1928 restaurant reopens on 3 December. The train from Zaragoza and Huesca has run to the station again since June 2025, so the trip can be made without a car.

For sun: Lanzarote
If December has to include a swim, the answer in Spain is the Canaries, and Lanzarote is the most distinctive of them. AEMET's averages for the island's airport give 21.8°C by day and 15.4°C at night in December, about 30 mm of rain across the whole month and close to 200 hours of sunshine. The sea stays at around 20°C: bracing, but swimmable.
César Lanzarote has 20 adults-only rooms on land that belonged to César Manrique's family, high on the slope at La Asomada above the vineyards of La Geria, with an infinity pool facing the sea. It holds a MICHELIN Key, and it had rooms on sale for the Christmas week when we checked. Palacio Ico is the town alternative: nine rooms in a 1690 house in Teguise, the old capital, around a courtyard of cactus, with a kitchen listed in the MICHELIN Guide. Our guide to Lanzarote in winter goes further.

For a city at Christmas: Madrid and Seville
Madrid does Christmas properly: lights on the main streets, the market in the Plaza Mayor, the crowds around Sol on New Year's Eve. It is also cold — 10°C by day and under 4°C at night on average — which makes a hotel with a real interior life worth paying for.
The Mandarin Oriental Ritz, opened by Alfonso XIII in 1910 across the road from the Prado and restored in 2021, is one of Spain's five hotels with three MICHELIN Keys and the grandest address in the city. Único is the calm alternative: a 19th-century palace in the Salamanca district with 44 rooms around a garden, one MICHELIN Key, and rooms still on sale for the Christmas week when we looked.
Seville is the mild city of the Spanish winter, at about 17°C by day. Mercer Sevilla keeps eleven rooms and suites in an 1880 mansion in El Arenal, around a patio under a glass dome, with a roof terrace that still works at midday in December.

For a dinner worth the trip: San Sebastián and Cáceres
December is the month to eat in Spain: game and Ibérico at their best, dining rooms without the summer crowd. San Sebastián is the obvious capital. In the 2026 MICHELIN Guide its six starred restaurants hold eleven Stars between them, and the towns around it add four more. On 21 December the Santo Tomás fair fills the centre with farm stalls, talo and txistorra. Expect rain: an average December brings 151 mm, three times Madrid's, the most of any city in this guide.
Akelarre is the dinner and the bed in one: Pedro Subijana's restaurant on Monte Igueldo has held three MICHELIN Stars since 2007, and since 2017 it has had 22 rooms in five stone volumes above the open sea, with two MICHELIN Keys. The restaurant closes every year from 19 December to 26 February and the hotel takes no guests from the night of 20 December, so it works for the December long weekend but not for Christmas. Villa Favorita, the last of the 19th-century villas on La Concha, is the town alternative: a small adults-only hotel with one Key, the bay in the windows and the old town's pintxo bars fifteen minutes away on foot.
Atrio, in the walled old town of Cáceres, is the other great December table. Toño Pérez and José Polo's restaurant holds three MICHELIN Stars, its cellar about 40,000 bottles, and the fourteen rooms upstairs three MICHELIN Keys, which completes Spain's five. Cáceres is cold and quiet in winter, and at its best then.

The dates that move December
In 2026 they line up as follows.
| Date | What happens | What it means |
|---|---|---|
| Sat 5 – Tue 8 December | Constitution Day falls on Sunday 6, and ten regions, among them Madrid and Andalusia, move it to Monday 7; the Immaculate Conception is Tuesday 8 | A four-day weekend for much of Spain: book Madrid, Seville and the mountains early |
| From 14 December | Canfranc Express reopens after its autumn closure | The best fortnight for Canfranc, if the snow is in |
| 18 December | Last dinner at Akelarre: the restaurant closes from the 19th to 26 February, the hotel from the night of the 20th | San Sebastián's three-Star stay works only in the first half of the month |
| 21 December | Santo Tomás fair, San Sebastián | Farm stalls, talo and txistorra in the centre for one day |
| 24 December – 6 January | Christmas, New Year and Epiphany | The most expensive fortnight of the winter; cities and ski resorts fill |
The nine hotels in December

What December is not good for
Four honest warnings.
- Swimming on the mainland or the Balearics. The sea is cold and most beach hotels are closed. Only the Canaries keep a beach season.
- Long driving days. The sun sets before six in most of Spain, and mountain roads in the Pyrenees can need chains after snow.
- Island hotels in Mallorca and Menorca. Many close between November and March; check before planning a December trip to the Balearics.
- Last-minute Christmas. Between 24 December and 6 January the cities, the ski resorts and the Canaries are at their fullest and dearest. Book early, or travel in the first fortnight of the month.
How we selected these hotels
Every hotel here is scored on the public Unlisted Index and was chosen because it works in December: a ski valley, a winter sun, a city interior or a table worth the trip. The climate figures are AEMET's 1981–2010 normals for each city's weather station, read on 13 October 2026; the holidays are those of the official 2026 calendar in the Boletín Oficial del Estado; closures come from each hotel's own site.
If you are travelling earlier in the autumn, Spain in November and Spain in October cover those months. Availability buttons may use affiliate links and can earn The Unlisted a commission without changing your price; commercial links do not decide inclusion.
Frequently asked questions
Is December a good time to visit Spain?
Yes, if you choose the right kind of trip. It is a good month for cities, food and the mountains, and a poor one for beaches anywhere except the Canaries. Prices are low in the first half of the month, except around the 5–8 December long weekend, and rise sharply from Christmas Eve.
Where is it warm in Spain in December?
The Canary Islands. Lanzarote averages 21.8°C by day and 15.4°C at night in December, with the sea around 20°C. On the mainland, Seville is the mildest of the big cities at about 17°C by day.
Where can you ski in Spain in December?
The Pyrenees and the Sierra Nevada usually open in late November or early December, snow permitting. In the Aragonese Pyrenees, Candanchú and Astún are 7 and 10 km from Canfranc Estación, the hotel in the old international station.
When is the December long weekend in Spain in 2026?
From Saturday 5 to Tuesday 8 December in ten regions, among them Madrid and Andalusia, which move Constitution Day from Sunday 6 to Monday 7; the Immaculate Conception on Tuesday 8 is a holiday everywhere. It is one of the busiest weekends of the year.
Which restaurants close in December?
Some of the great ones take their winter break around Christmas. The restaurant at Akelarre in San Sebastián closes from 19 December to 26 February, and its hotel takes no guests from 20 December. Check the dates of any restaurant you are travelling for before you book the room.
