The verdict

An 18th-century hacienda in the forest of Chocholá, half an hour south-west of Mérida, that went over to henequen — the agave fibre that made Yucatán rich in the 19th century — and now holds 40 casitas and villas, each casita with its own pool. The spa is built beside a cenote, one of the natural sinkholes of fresh water that the Maya held sacred, and the cooking at Ixi'im carries the name of Jorge Vallejo, of Quintonil. It holds two MICHELIN Keys, and it is the most complete stay in the state.

Best for

A week of rest with a programme — spa, yoga, the forest — and day trips to Uxmal and Mérida.

Skip if

You want a town at the door: this is a resort in the forest, and Mérida is a drive away.

Insider tip

Book the spa early in the stay rather than on the last day, and go to Ixi'im for dinner at least once — ask to see its wall of tequilas before you sit down.

The rooms

Forty casitas and villas. The casitas, about 200 m² each, pair local stone and timber with glass, and each has a private pool and an outdoor shower; the Family, Presidential and Royal villas have two or three bedrooms, and the Royal Villa keeps the walls of the old hacienda around its terrace and pool.

The setting

In Chocholá, in the low forest south-west of Mérida, around the restored buildings of the hacienda and its cenote. Interiors are by the Mexican designer Paulina Morán; the resort won a Prix Versailles for its architecture and design.

The food

Ixi'im is the main restaurant, Mexican cooking with a local approach under the name of chef Jorge Vallejo; Ki'ol cooks lighter, health-minded dishes, and Sikar Bar sits under the trees by the garden. Produce comes in part from the resort's own Maya gardens.

Getting there

About half an hour by car from Mérida, whose airport is the closest. Uxmal and the Puuc route are a day trip; Chichén Itzá is further, towards Valladolid.

Good to know

The spa's rituals are led by Maya healers, with yoga by the cenote. Families are welcome in the villas. Chablé has a sister on the coast, Chablé Maroma, which is a different, beach stay.
