The verdict

Six suites inside the working distillery of Mezcal El Silencio, on nine acres of agave in the valley of Xaaga, near the Zapotec site of Mitla. It opened on 15 September 2021, designed by the architect Alejandro D'Acosta in rammed earth, timber and volcanic stone, with a central wing where the agave is roasted, crushed under the tahona — the stone mill wheel — fermented and distilled, and the suites on either side. It is not in the MICHELIN Guide; it is a stay built around mezcal, the landscape and a long dinner at a stone table.

Best for

Two nights in the valley after the city, for travellers who want to see mezcal made where they sleep.

Skip if

You want a town at the door: the distillery stands alone among the fields, about an hour and a half by road from Oaxaca City.

Insider tip

Walk the agave fields before sunset, then take your seat at the stone table: the five-course dinner is timed for the last light over the valley.

The rooms

Six suites — Agua, Tierra, Fuego, Luna, Aire and Sol — each furnished with pieces made with Oaxacan artisans and young artists; interiors are by Martina D'Acosta, in burnt wood, leather, wool rugs and copper lamps. Some suites have fireplaces, and the bathrooms have monolithic stone basins.

The setting

In the valley of Xaaga, east of Oaxaca City near Mitla, among agave fields with the mountains on every side. The building's three wings are the palenque — the traditional mezcal distillery — flanked by the guest wings; recycled El Silencio bottles are set into the walls. There is a heated plunge pool.

The food

Executive chef José Carlos Acosta cooks the hotel's Oaxacan menus in an ancestral kitchen: a three-course lunch and a five-course dinner, both by reservation. The distillery tasting pairs the house mezcals with small bites by chef Rodolfo Castellanos.

Getting there

About an hour and a half by road from central Oaxaca City, and about an hour from its airport. Ask the hotel to arrange the transfer; a car or driver is essential.

Good to know

Not on Booking.com: book through the hotel. The rate includes breakfast, lunch and dinner (drinks aside), the distillery tour and a tasting. Guided tours of the palenque are for adults only. Day visitors come for lunch, dinner and tastings.
